The reason they left storms end was because they heard what Aegon did to Harren hall. He burned the castle and its walls killing king Harren without a fight. The storm king wanting to avoid the same fate left the castle.
The dornes managing to land scorpion bolt was aa 1 in a million lucky shots. The main reason they avoided conquest was because they abbandoned their citys and hid in the sands using Gorilla tactics to wait out the dragons. Things were not smooth sailing for Dorne however the loss of all their citys caused the Dornish to later rebel and usurp their own queen who's stubborness caused countelless deaths.
