I'd say an enemy that a lot of people forget exists is the Flying Insect (afaik that's the official name) from RE7. I remember that a lot of people complained that aside from the Bakers all the enemies in RE7 were just variants of the Molded, but the Flying Insects were also there even if they only appeared in the Old House

I am not shocked most people haven't played dead aim.. You can beat it in 2 hours without even trying to speed run it…
Other than not bothering to learn how to pronounce Aculeozzo because, well… streamers and their incredibly limited IQ and unwillingness to learn something new, this enemy is actually a reward of sorts for clearing an area in RE Revelations’ Raid Mode.
Because it has such a tough skin, shooting an Aculeozzo is a waste of ammunition. Instead, use a knife to stun lock it to death or throw an electric grenade, which will kill it instantly

I'd say that the single most obscure Resi creature would have to be the Tyrant-C from Outbreak File 2's Showdown 3 minigame, a boss rush that has you fight every boss between the two games in order – if you can beat the two Tyrant-R's in the final stage, an even faster Tyrant with a purple trench coat and horns will be dropped into the arena, and it'll attack you with its long elasticated arms from a distance.
Since you need to beat TWO Tyrants before you fight it, that makes it damn near impossible to actually find out about, and it's in a minigame that requires spending points you earn through playing the campaign stages to unlock, odds are only the most dedicated Outback players are ever going to encounter it.
