I'm not used to motor racing too but you're not using your rear break. You can see the throttle indicator at the right corner and besides that there are also two more bars. The longer one is the front brake while the shorter one is for the rear brake. You can turn on an assist for rear brake. It brakes for you iirc or you can look through the controlls to find the rear break button. I, personally, changed the rear brake button to right stick(R) so that I can adjust the % of the break. I pull it towards me(to down) but you can choose a different direction. But oh boy does it hard to brake with two buttons.

The only thing (I think) I've learned so far is "slow in, fast out" is king.
You want the Suzuki Hayabusa. Suzuki stopped making them because they were too much bike for anybody to handle.

It looks like a competent game. I saw Ride 3 dirty cheap on steam and was almost tempted to get it, but I'm not a bike guy.
I'm waiting for Forza Motorsport, have hopes for that game to be a good simcade.
