Sliced head cheese is an awesome sandwich ingredient. Yes, really. Head cheese, leaf lettuce, creamy garlic mustard, semi-ripe (crispy, but not green) sliced tomato, and sharp cheddar all stuck between slices of a seasoned bread such as foccasia or tri-color bread is absolutely phenomenal.

Headcheese is good.. They call it brawn in the UK.. In the US it's best served as coldcuts.. (Razor thin sliced lunch meat).
My grandfather made his own brawn when he was alive. But then he was born in 1899 and lived through the Great Depression when everyone was poor. I can report though, that it tasted mightily fine. Sadly his recipe died with him. Otherwise I would have tried making it myself.

My dad makes a Russian version using chicken thighs. I refer to it as meat jello. Somehow to me meat jello sounds less gross than head cheese.

I love Greek yogurt. Mix in some fruit and muesli, then drizzle some honey over it. Delicious. I also eat it plain or slice shallots into it like the do in Iran for savory yogurt.
The American version of the first thing is pig in a blanket.

We have head cheese in Austria. I'm not a huge fannof the jelly part because of the consistency of jelly, but the taste is actually good.
