Biomutant had awesome mounts.
This video has reminded me that Panzer Dragoon Saga is the ugliest game ever made. A lot of people poke fun at games like FF7 for their early 3D graphics having "aged poorly" and looking like Lego men sent through a wood chipper, but Saturn wasn't even originally meant to render 3D games and boy it shows.
Ruin shouldn't count because it's still a horse.

When I think of strange mounts I think of Shin Megami Tensei Imagine that allowed to ride many demons, one of those was Alice (Who looks like a 10 years old girl) and her "mount" animation was her holding your hand and guiding/dragging you.
Also in Scribblenauts you could ride a flying winged dotted bathtub.

I know this won't count but I thought I'd mention 2 mods for Fallout 4 that bring unusual mounts into the game. The 2 Driveables Of The Commonwealth mods let you craft horse-sized dogs and cats to ride that are not only fast, but also shoot laser gatling gun beams from their eyes. In addition, the craftable dogs have the same AI as Dogmeat, so when you get attacked, they go after your attackers. It's like having a personal army. But the dogs aren't invulnerable to enemy weapons.
The Mechs you can ride around in the Mega Man X games. Just something so Meta about robots riding around in other robots 😆
Hmmm… let's see…
– In Earthworm Jim 1, there's an underwater level where Jim can ride a giant hamster.
– In Donkey Kong Country 2, Diddy and Dixie can ride Rattly, a coiled-up rattlesnake that can jump like a spring.
РIn Pok̩mon Let's Go, you can ride several Pok̩mon. However, this includes Snorlax to which your trainer and starter grab it by the belly XD
– In Little Nemo: The Dream Master, Nemo can ride a Hermit Crab for swimming, digging through sand and pincer attacks.
– In Rayman, you get to ride a boss Rayman befriended, and it's a mosquito.
– THIS ONE MIGHT BE BETTER FOR YOUR RPG MOUNT LIST, but it's pretty hard to ignore the Pandarians' turtle mounts in WoW… which is supposed to be a very slow animal 😛

I'm shocked, flabbergasted, and offended that No Man's Sky isn't on this list. There is a literally uncountable amount of mounts in that game, and they all look alien & strange.

World of Final Fantasy allowed you to ride all or most of the large Mirages, including a penguin/woman hybrid.

In ARK: Survival Evolved, you can ride EVERYTHING (well, almost) XD From giant spiders and moths to undead wyverns, world bosses, and mechs. Ark's mantises can't breathe fire, but they can hold and use weapons
Say what you will about Crash of the Titans & its sequel, but there was something about beating the crap out of the Titans & then riding them was so satisfying to me as a kid. Especially the boss monsters like the Yuktopus.
I guess the developers of The Crystal of Kings have never seen an anteater, then again the video's editor did flash an echidna. The in-game anteater mount looks more like a cross between a aardvark & a kangaroo.
