You could always place some coloured wool or something over the flower fields temporarily, make the map, lock it, and then remove the wool. That way you get the coloured flower fields on the map.

Idea: what if you made the paths in Chromia rainbow?
I'm not sure if this would work, but maybe to make the flower fields look colorful on the map you could use colored glass way up in the sky???
