I'd say that the only thing the Umbrella viruses are most definitely way way more dangerous at than Las Plagas is, as you mentioned, their incredible infectiousness and spreadability. That is the only weakness of the parasites. Other than that, Las Plagas wins as the most dangerous of the two overall
Bro, one big epiphany I had was the fact Luis’s death wasn’t just a tragedy, but a huge blessing. He was part of the team that made the ne-alpha parasite that made nemesis (inspired by Las Plagas btw) and was injected into lisa Trevor, creating the g-virus. If he lived to escape with Ada and Wesker got his hands on him, Wesker might have had another version of the g-virus in his bioweapon Uroborous, as well as much more refined variants of new plaga strains thanks to having their top parasite specialist on board.
I'm going off just old memory here but in RE4 remake wasn't Nemesis retconned into being a Las Plagas + T Virus hybrid?
he got all the advantages of a tyrant, but they used a plagas as a stand in for the brain so it had higher potential to follow orders and remain intelligent, hence why it could speak.
That method would mean that people less compatible could be made into tyrants rather than the 1 in a million that makes things like the Mr X types.

Eh, you missed the special Plaga strain that Ada was searching so hard for throughout the game and why it's so special. In Separate Ways in the REmake, Ada was trapped in the radio tower with a strange Plaga creature called Martinico. Martinico was so insanely powerful and durable, that it was essentially immune to all conventional weapons, including the Rocket Launcher. The only thing that could stop it was lasers, which Ada used to great effect by dodging the laser corridor. What made Martinico so special is that the Plaga used to infect him was from a Dominant strain that's potentially even stronger than the Plaga inside Saddler. That's why Wesker and Saddler wants it so much. Fortunately, Martinico was not a particularly intelligent being even when he was human, but imagine if someone with Saddler's intelligence was given the unholy durability of Martinico. They'd be unstoppable.

The las plagas is quite can be easily prevented as long as the egg didn't hatch.
