Since the updates come out roughly every six weeks, there's already a lot (like, *a lot*) in the game, even not counting the temporary events, and with a major update that will happen at the end of this month, there will be even more, so you might feel compelled to catch up as soon as possible. Here's advice: don't rush. Genshin as a game isn't really meant to be speedran, and exploration is a big part of the game. So take your time, explore the map at your own pace, enjoy the scenery, even just stop at a pretty location and enjoy the soundtrack. The stuff that is permanently in the game will wait for you 😀 And as for temporary events, while some of them are mostly minigames with a crumble or two of worldbuilding, some others turn out to be big and plot relevant (unfortunately, there has been no event reruns so far), so if you wanna learn about those, youtube has both silent playthroughs and summary videos with key plot points. There are also certain events that happen once each year (this has been the case so far, at least), like Lantern Rite (Chinese New Year), and while the event specifics are different each time, the main theme is similar enough to know what to look forward to. So, take your time.

There is also another trailer called teyvat chapter storyline preview (I think) which is basically a preview for the entire game, including chapters that are still not out. Maybe someone has mentioned it before.
While version 2.2 was a bit on the filler side compared to others, it was hype at least for some people (me) because the two prominent characters of the main event of that version were Childe and Xinyan. Prior to 2.2, Childe was absent from the plot for quite some time, and Xinyan had like one minute of screentime total, and neither of them knew the other, so seeing them both together was fun 😀

Each trailer have 3~4 parts:
1. Main(permanent) story chapters additions -> along with permanent regions/bosses
2. Temporary (3~6 weeks) events that usually consists of minigames and a bit of interesting lore building
3. New characters (and their relevant story chapter or hangout event)
4. New mechanics. These ones are rare, like the teapot or hangout event
you should react teyvat trailer too. It is like a map that will show you what we will see in this game. Also maybe after learn about something Fatui, you can react winter nights lazzo (maybe after the inazuma archon quest because of the spoilers)

You are correct in assuming by this point, there is ALOT of content in this game now. I will say if you're hoping to play through the 3.0 version content as it comes out, start progressing through the story right now. The vast majority of event content is only available during the Version it premieres in, and is often locked behind a prerequisite story quest or level cap.
I myself got back into the game when 2.0 started because Raiden Shogun OMG yes please! I didn't actually get a chance to fully partake in events until 2.3 because I was so behind on the story content. Hope you have a blast progressing through this story as it continues to unfold in the months and years to come.

2.0 and 2.1 were definately my favourite time and trailers in genshin like the TENSION WAS SO WELL INTENSE AHHH. i love rewatching all these because i still feel the excitement i did when they first came out as well as you reactions!

I still remember when version 2.0 trailer came out a year ago. I was so freaking hyped seeing the Raiden Shogun pulling the sword out of his chest and it made her went straight up to the top of my wishlist. Luckily I saved enough primogems to get her and Ayaka after grinding through Windblume until the Golden Apple event. In my opinion, she is definitely one of the best all-around character in the game, along with Zhongli. I wish you luck getting all the characters you want.
