"Coq au vin" is a peasant dish. The "coq" is an old rooster. " The "vin" is red wine, cheap.
An old rooster is a tough, stringy bird, and takes hours to cook to tenderness. The wine helps tender the meat, and adds flavor.
My preferred method is a whole bird, in a crock pot, with Chardonnay, rather than cheap red wine. SPG, of course, and whatever herbs you prefer.
6 hours minimum cook time.
You couldn't serve that in a professional kitchen. It's wonderful food for the home kitchen.:)
